It all started with a Dollar

Two mates, one buck and an abandoned flour mill. Discover the legendary story of how it all began. Whisky is what we do family is who we are. Corowa a town that’s steeped in rich history since the 1840s. It was named the ‘birthplace’ of Australian Federation after our people began the movement towards a united country. By the banks of the Murray River, Corowa’s Flour Mill built our town from the ground up. Exporting grains across the country and around the world, she was a powerhouse. Until her doors shut in 1970 and the building was left to decay. It was the end of an era and our whole town felt it.

When two men with a love of footy and a passion for whisky meet, something beautiful happens. An idea to turn the town’s abandoned flour mill into a world-class whisky distillery. Ambitious? Yes. A little nuts? Maybe.

When a small town unites, big things happen. The council sold the old mill to us for a buck and a promise. To bring it back to life and put our little town on the map. Our community have become just as much a part of our whisky as the distillery, the ingredients and the land itself.

In every drop of Corowa’s finest, you’ll get a taste of true Australia. And that’s the way it should be. From the grains we source from local farmers, to the water we pinch from the Murray River, and our copper stills handmade right here, we’ve always supported local.

From the Scottish highlands to the Tasmanian mountains, we’ve travelled the world mastering the craft under top distilleries bringing back their secrets and made it our own. Looking at this ancient craft through fresh eyes, we’ve captured its essence and created new processes for a refreshingly new take on whisky.

Our process, great tasting whisky doesn’t just happen. It takes the finest ingredients, exceptional methods and quality craftsmanship to produce it. So how do we do it? Well it’s a big fat secret, but since you asked.

It begins with the barley, we’re very specific about the type of barley we use. Small but mighty, it creates the flavour that defines our distinctive Corowa character. Using traditional varieties that have now become scarce, we use barley that was once exported to Scotland. We source organic grains from Dean’s family farm and work with local farmers who have been harvesting the land for generations.

Next you add water, there’s a little bit of Murray River in every bottle. Starting from the pristine Snowy Mountains of the Great Dividing Range, the famous Murray River flows past Corowa on its 2,500km journey. Lending some of its purity to the whisky, the river imparts something special into the flavour of our drop.

And then you wait. Cold nights and hot days make the ideal climate for maturing whisky.

Thankfully, Corowa is blessed with both. Our temperature changes at least 15°C each day, allowing the spirit to naturally mature at a faster rate and extract flavors the rest of the world can’t. These extreme temperatures bring exceptional complexity and character to our whisky in a timeframe that’s the envy of many other distilleries.

Its our fresh take on a centuries old craft, Corowa is a dichotomy. With its traditional farming heritage, we brought the age-old art of whisky distillation to town. We turned the historical flour mill into a world class distillery and then employed one of the youngest head distillers in the country to look at this ancient craft through fresh eyes. We’re bringing to life the next generation of this spirit and work with distilleries the world over for a truly global perspective on the future of Australian whisky.

And the final result – Whisky as whisky should be. Effortlessly smooth, full of proud heritage and authentic flavour – where the key to its success lies in the raw ingredients and the people who enjoy its company.
