Organic Barley Single Barrel 534

This whisky begins long before the still. Grown without synthetic fertilisers or artificial intervention just the soil and the steady rhythm of the farm. Regenerative farmers Chris and Sam Greenwood have been growing barley on their 6000 acres in Coleambally for us since 2017.

Distilled to preserve the purity of the grain, the spirit was filled into a single American oak ex–Heaven Hill bourbon barrel and left to mature for four years and nine months.

The bourbon cask lends restrained notes of vanilla, toasted oak and gentle spice, never overpowering instead allowing the whisky’s true voice to shine: sweet cereal, fresh harvest character and a natural, textural depth that speaks clearly of its origin. A deliberate paddock-to-cask expression, honest, structured and crafted with intent.
